Pumpkin Muffins/Cupcakes with Carrot Marmalade Creme Cheese Frosting
Simple and easy-to-make!
Ingredients for the Muffins:
- 1 Pkg of Spice Cake Mix (I use Duncan Hines)
- 1 Can (15oz) Pumpkin
- White Chocolate chips and/or Pecans
- 8oz of Softened Cream Cheese
- 1/4 Cup Softened Butter
- 1 Tsp of Pure Vanilla Extract
- 4 Cup Confectioners Sugar
- 1/3 Cup Stonewall Kitchen Orange Carrot Marmalade
- Mix the cream cheese, butter and vanilla extract in a bowl. You can use an electric mixer, if desired.
- Add the confectioner's sugar and marmalade and beat until smooth. And frosting is ready!
- Prepare 12 regular size muffin tins.
- In a large bowl, combine just the cake mix and pumpkin until well blended.
- Once is blended add white chocolate chips and/or pecans to taste.
- Batter should be thick and ready, prepare 12 regular size muffin tins and spooned the batter
- Preheat oven and bake according to package directions for muffins.
